Water Kefir    Photo © Puntarelle & Co        Botanical Infusion Water Kefirs      It is glorious spring weather in the countryside, plants and herbs are in their glory, luscious greens, wonderful meadows with flowers and still a few bluebells left in the woodlands giving fantastic aromas in the air. It seems all trees and bushes are in bloom. River banks are getting rich with young wild sea vegetables; rosemary, samphire, sea beets and all sorts of other salty loveliness.  I’ve been foraging a lot this week. You don't really want to miss such a beautiful time of year.         While Mediterranean fruits are ripening to their perfection I went crazy for Botanical flavours for  London Fermentary Water Kefir . Primarily this is because I like to follow the seasons and use what nature gives. In particular, with plants having healing powers, I love to add them to our fermented products. It fills our jars & bottles with goodness making them extra special! We made testers with all sorts of herbs and tree flowers.        This week we are expanding and a brand new fridge is arriving at Puntarelle & Co for London Fermentary. This will be totally dedicated to delicious Bubbly Raw Water Kefir, packed with enzymes, vitamins and probiotics. These are the drinks that make you feel good!     As well as customer favourites of Honey & Camomile, Alphonso Mango and Juniper & Lemon flavours , we are adding new  Botanical Flavours : classic  Elderflower & Lemon , of course - everybody seems to have been foraging for elderflowers this week!  Also,  Tarragon & Lemon  is something special for me. There was a favourite lemonade in my childhood, originating in Georgia, bright green, made out of tarragon and known to us “ Tarhun “.  Inspired, I tried to recreate the flavour in our water kefir. It worked brilliantly. Not so sweet , anise flavoured and savoury with a light fizz. I really recommend you try it and I look forward to hearing your feedback.     There are a lot more flavours to come as the fruit season progresses , Italian Percoca Peaches , Fragrant Fragola grapes, lovely English cherries and Blackcurrants , Kent Raspberry of course. All will be available and will go into our Water Kefir too. It is a lot of fun to follow the seasons!
